How should I cook chicken to shred and mix in with rice and corn and similar things? I've heard about marinading and baking and slow-cooking and boiling and I just don't understand. I've spent a lot of time trying to figure this out, but I just can't. Luckily, almost everything I'm making is either very easy (pan-roasting corn, duh) or something I've already successfully made many times before. Tomorrow, I'm going to try to make "mexican" food, but I've failed to find a recipe that covers the whole process from beginning-to-end while also accommodating my family's severely restrictive dietary needs, so I've pretty much compiled a short list of recipes for individual ingredients (corn, beans, rice, veggies, chicken) and am counting on throwing them all together. I can steam veggies and boil pasta and bake pretty fine, but other than bacon and frozen chicken nuggets, I've never really prepared raw meat. I have veeeery minimal coking experience.
